  • Allow the mixture to ferment for 8-12 hours. During this time it will swell.
  • After fermentation, add salt to it.
  • Apply a little oil on the plate of the idli stand. Pour the mixture into it.
  • Steam in steamer for 10-15 minutes. When the idli is cooked, take it off the stand and serve it hot.

  • Capsicum: 1 (chopped)
  • Eggplant: 1 cup (cut into small pieces)
  • Oil: 2 tbsp
  • Mustard Seed: 1 tsp
  • Fenugreek seeds: 1 tsp
  • Curry leaves: 8-10
  • Red Chillies: 2-3
  • Turmeric powder: 1 tsp
  • Coriander powder: 2 tsp
  • Cumin powder: 1 tsp
  • Sambar masala: 2 tbsp
  • Asafoetida: 1 pinch
  • Tamarind paste: 2 tbsp
  • Salt: As per taste.

Method of making sambar:

  • First, wash the tur dal well and cook it in a pressure cooker. Once the dal is cooked, mix it well.
  • Heat oil in a large pot. Add mustard seeds, fenugreek seeds, and curry leaves to it.
  • After it boils, add chopped onions and fry until golden.
  • Add chopped tomatoes and cook until soft.
  • Then add carrot, potato, drumstick, capsicum, brinjal and saute until the vegetables are slightly soft.
  • Saute the masala well by adding turmeric powder, coriander powder, cumin powder, sambar masala and hing.
  • When the vegetables and masala are well mixed, add the boiled dal.
  • Make a thin broth by adjusting the amount of water. Let it boil for 10-15 minutes.
  • Add tamarind paste and salt and cook for another 5 minutes.
  • If desired, can add grated coconut.
  • Once the sambar is ready, serve it hot.

Serving idli sambar:

To serve idli sambar place the hot idli on a large plate and add the sambar. Idli served with chutney and podi enhances the taste. Sambar goes well with idli, as well as dosa, upma, and rice
